- 1 egg, beaten

- 200g (7 oz) white fish fillets (such as cod or haddock), finely chopped
- 100g (3.5 oz) shrimp, peeled, deveined, and finely chopped
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tablespoon fish sauce
- 1 teaspoon soy sauce
- 1 teaspoon sugar
- 1/4 teaspoon ground black pepper
- 1 tablespoon chopped fresh cilantro (optional)
- 1 tablespoon chopped green onions (optional)
Instructions:
- Prepare the Fish & Shrimp Mixture:
- In a bowl, combine the finely chopped fish fillets and shrimp.
- Add the minced garlic, chopped onion, fish sauce, soy sauce, sugar, and black pepper. Mix well.
- If using, stir in the chopped cilantro and green onions for extra flavor.
- Prepare the Toast:
- Cut the crusts off the bread slices.
- Using a rolling pin, flatten each slice of bread to make it thinner and more pliable.
- Assemble the Toast:
- Spread a generous layer of the fish and shrimp mixture onto each slice of flattened bread, making sure to cover the entire surface.
- Press down lightly to ensure the mixture sticks well to the bread.
- Fry the Toast:
- Heat a generous amount of vegetable oil in a frying pan over medium heat.
- Dip each prepared slice of bread into the beaten egg, ensuring it is coated on both sides.
- Place the egg-coated bread slices into the hot oil, fish and shrimp side down.
- Fry until golden brown and crispy on the outside, about 2-3 minutes per side.
- Drain and Serve:
- Remove the toast from the pan and place it on a paper towel-lined plate to drain excess oil.
- Slice into smaller pieces if desired and serve hot.
